Nose mature, pleasantly bretty horse saddle and damp leather, round plummy ripe fruit, soft blackberry and jammy fig confiture.
Wonderfully expressive nose, very open soft and ripe, mature and spicey, round soft fruirts strawberry and raspberry, with some tart cranberry, soft leather and earthy wet forest character, palate light well balanced with long firm acidity, soft dried fruits, shorter on length than expected.
Straw golden colour with slightly amber rim, needs air to open up, decanting required, honey, nuts, lanolin and beeswax aromas, orange, tangerine, herbal and camomile, still with a crisp fresh acidity and long complex mineral palate.
Tight black fruit, vanilla and coconut oak, new US oak full and smoky, eucalyptus and and mint ethers, solid palate showing little maturity, big long heavy and complex.
Ronan Sayburn was one of the first true Sommeliers who welcomed me into Sommellerie over 10 years ago, opening his door to share his knowledge and assist in developing my sommelier skills whilst working in Michelin starred establishments. He has been a direct influence in my professional development and wine studies including national and international sommelier competitions. His willingness to assist and support anyone with a true desire to further themselves in the hospitality industry is effortless, and one which echoes across the UK and abroad through world-wide recognition and respect amongst his peers and leading industry figures.
